150 g of milk
-100g water
-1 Teaspoon of sugar (for sweet one)
-1 Pinch of salt
-125 G of butter
-140 G flour
-5 Eggs


-preheat oven to 200 degrees
-in a Casserolle, boil the milk with sugar water, salt and butter in cube
- Sift the flour into a bowl
Outside the heat, add the flour all at once in the pan and mix vigorously with a spoon until all the flour is incorporated
-return the saucepan to the heat and dry the paste . it must be detached from the walls of the pan
it takes about one minute
remove the pan from heat and put the dough in a bowl, then one by one, put the eggs into the bowl until the dough again become homogeneous before setting the following
-do the same for the 4 eggs
-beat the fifth egg in a bowl and gradually pour in the mixture
you may not need to put in full
puff dough is ready when the dough is forming a ribbon

-dresser puffs about 3 cm on a plate lined with parchment paper using a pastry bag
-cook the puff about 20 minutes making sure, after 10 minutes, open the oven door from time to time so that the steam escapes, and the dough dry well
-when the sprouts are nicely browned, remove from oven
